Baking recipes: how to make a delicious carrot cake

Although my mum was always baking delicious cakes, she never ever made a carrot cake.

When I started dating Ryan, I discovered that amazing cake and I started baking it myself.

I was trying loads of different recipes, and most of them were not perfect.

Sugarlady, a Polish master of baking, brings the best recipe for this cake! Here’s what you need.

Ingredients for carrot cake

100 grams of flour
110 grams of sugar
1 teaspoon of baking soda
¾ teaspoon of baking powder
1 teaspoon of cinnamon
¼ teaspoon of salt
150 g of rapseed oil
2 eggs
1 glass of chopped walnuts
1 glass of freshly grated carrot
25 g of mascarpone
150 g of white chocolate
Baking tin – 22 cm wide
Baking paper

How to make carrot cake

Prepare two bowls. Place flour, sugar, soda, baking powder, salt and cinnamon into one bowl and mix it well. Put eggs and oil in another bowl and mix it. Place powder ingredients and mix it with eggs and oil, add walnuts and grated carrot. Mix it all well and place in the baking tin.

Heat the oven to 180 degrees and bake the cake for about 40-45 minutes.

How to make your own icing for cakes

You can also make your own icing! All you need is mascarpone and white chocolate.

Whip mascarpone and add melted white chocolate. Mix it until smooth.

Once the cake cools down, place the icing on it, and place whole walnuts on top of the cake to decorate!
